Simple and Delicious Vanilla Cupcakes

If you are looking for a super easy Vanilla Cupcake recipe, or you've struggled to get good results, this is the one for you!! It's so easy the kids can do it, and it's pretty much fail proof if you follow these simple tips. These cupcakes have a lovely light and fluffy texture that will make it hard to stop at one.


I always say that you can judge a baker by their vanilla cake. It's surprisingly one of the hardest recipes to master with not much room for error.


This recipe manages to give you a really good result with basic ingredients and all in one bowl.



So let's talk prep...

Make sure all of your ingredients are at room temp. And yes, this includes your milk. Pop it in the microwave for 5-10 seconds and you're ready to go.

If you forget to take the rest of the ingredients out or you decide to do some baking on the spur of the moment, you can still get everything ready quickly.


Just pop your butter in the microwave on a very low heat for 30 seconds at a time until it's soft and put your cold eggs in a bowl of hot water from the tap for a couple of minutes and you're set.


And yes, this prep really does make a huge difference and I'll explain why.

If the butter is cold, it takes too long to break down and blend with the other ingredients. This means you would have to beat the batter for a long time, resulting in a tough over worked mixture, and if your butter is soft but milk or eggs are cold, that will seize your butter again, ending up with the same result.


Just some notes...

  • Milk can be any type of milk...soy, almond, low fat and whole cow's milk.

  • I use plain flour with baking powder instead of self-raising as it gives a finer texture.

  • I use unsalted butter so I can control the amount of salt added.

  • XL or 700 gram sized eggs.

  • Always use vanilla extract, not essence. I'm not a fan of artificial flavourings and real vanilla extract cannot be compared to essence - it's flavour is far superior.

  • This recipe can be doubled if you need a bigger batch, just make sure your mixing bowl is big enough to accommodate all the batter.

Can marg be used instead of butter? I'm allergic to dairy.

Great question...yes you can use non dairy butter or marg..just don't let it get too soft as they are already very spreadable. Really doesn't need to come to full room temp. Enjoy 🙂

How long in advance can these be made and what is the best way to store them?

Great question...you could make these a week in advance and as soon as they are completely cool..pop them in a zip lock bag and freeze. Take out just before you decorate..you can pipe straight onto a frozen cake and then let them come to room temp before eating. Good luck 😁
