Marbled Brownies

In keeping with my quick and easy but super delicious treats, this one couldn't be left out.


One of my all time favourites and it seems to be everyone else's too.

I've made this for family gatherings, fundraiser morning teas, work demos and it's a huge winner at my girls' sports.


I love to share my baking with everyone, everywhere I go, so having a list of fast and easy winners makes that possible.


With these Marbled Brownies, you get the fudgy chocolate brownie combined with a swirl of baked cheesecake topping. They are heavenly!!!




So a few tips to keep things on track..


I usually use the microwave to melt the butter and chocolate, just make sure you use a heat proof bowl and put the microwave heat setting on 5 or medium.

You want to warm it slowly otherwise the chocolate will seize from being overheated.

The best way to heat it slowly and gently is to only heat 1 minute at a time then give a little stir, repeating this until you have a smooth and silky mix.

You can also do this with a double boiler method or by melting the butter first in a saucepan, take it off the heat and then add the chocolate to the warm butter and stir util smooth.


Have your cream cheese at room temperature, it's so much quicker to beat until smooth.


And as usual, line your tin base and sides. Make sure that the baking paper comes up the sides in one piece so you can use that to lift the Brownie out once its has cooled.

Once you have reached the baking time, don't be tempted to let it bake much longer.

Brownie is much better slightly underbaked than overbaked...the fudgier the better.



Once they have cooled, cut into portion sized pieces, whatever size suits you.

The beauty with things like this is that you can cut into small portions when you have a crowd to feed or more generous serves when at home with the family.

And they can even be made ahead of time and frozen, just wrap twice in cling film and pop in the freezer. Take out the night before and place in the fridge to defrost, then cut to your size required.
