Easter is here...

I love Easter.

Actually I love all special occasions and making family traditions.

Nothing I loved more than making special memories for my girls when they were little...the more magical the better it was.



And who doesn't love a themed cupcake?


So first, head back to the Vanilla Cupcake post, bake up a batch of those easy cupcakes.

For a little extra chocolate treat, fold in half a cup of choc chips right at the end, just before scooping the batter into the papers. Be careful not to overmix.

While they are cooling, whip up a batch of simple buttercream from the previous post.


And lastly, here are some decorating ideas, perfect for visiting guests or box them up for a beautiful home made Easter gift.


CHOCOLATE OVERLOAD TOPPINGS

I have some chopped up Mars bars, Maltesers and broken candy coated eggs, drizzled with chocolate ganache. Obviously you could use whatever your fave chocolates are.

Pipe your swirls first, I'm using the 6B tip again.



EASY CHOCOLATE GANACHE

200 grms dark chocolate melts (Nestle is fine)

100 mls of puring/whipping cream (35% fat)

Pop chocolate and cream into a heatproof bowl or Pyrex jug. Place into the microwave on medium heat for 1 minute, take out and give it a stir and pop back in for 30 seconds more. Then let it sit for a couple of minutes, stir until smooth and all chocolate has melted.

Let it cool a little and use while still pourable. (If you don't have spare piping bags, it works just as well with a sealed ziplock bag.



PRETTY PASTELS

Now this one, I have separated my buttercream and coloured with Colour Mill Sage, Rose and Lilac.

Pipe some different swirls and shapes using tips 6B, 4B and 2D.


Left to right 6B 2B and 2D or 1M for the drop flowers.


I've topped them with some candy coated speckled eggs and dried flowers, finishing with a splatter of gold luster.



So get creative this Easter weekend and have some fun!
